Chocolate Candy Cane Cookies














Cookie Dough:
4 squares unsweetened baking chocolate
1 ¼ c. chilled butter
2 c sugar
2 beaten eggs
2 tsp. baking soda
½ tsp. salt
1/3 c corn syrup
2 Tbsp. water
1 Tbsp. vanilla (or 2 tsp. peppermint extract and 1 tsp. vanilla)
4 c. flour
Topping:
1¼ c. sugar
¼ c. finely crushed miniature candy canes

Melt butter and chocolate in microwave 3 minutes on high; mix thoroughly and cool. ombine sugar and eggs; beat until uniform pale yellow color. Add baking soda and salt and mix in well. Mix in corn syrup, water and vanilla. Add cooled butter and chocolate mixture. Add half the flour, mix well and add remainder of flour mix thoroughly. Mix topping together in small bowl with fork. Roll dough into 1 inch balls, roll balls in topping mixture and place on greased cookie sheets. Bake at 350 degrees for 8-10 minutes. Cool 2 minutes on cookie sheet, then remove to wire rack and cool completely.
